My family was a curse on Mexican restaurants for a long time. Our favorite restaurant in California? Caught fire. Our first favorite Mexican restaurant in Utah? Health department shut it down. Our second favorite Mexican restaurant in Utah? Closed its doors when I was in high school.
What’s a girl gotta do to get her guacamole fix???
And then we found La Cocina. Going strong in Salt Lake City since 1981. Huzzah! The curse is broken! Every time I go back home to visit the family, we make a celebratory trip to La Cocina. (Preferably on margarita night.) And they never skimp on the guacamole. Ever. You think it’d be easy to find a good Mexican food place in Denver. Well, you would be wrong. Hmph. I hear that if I venture south to Colorado Springs or north to Boulder, I might have better luck… for now… homemade!
This easy guacamole recipe can be adapted as you like. Red onion, a handful of cilantro, a few tablespoons of green chile, black beans, or corn are all optional add-ins. David and I prefer our guacamole simple. Delicious. Easy.
To prevent the guacamole from turning gray, smooth the top of the guacamole flat with the back of a spoon. Squirt a generous amount of lime juice all over the top of the guacamole and cover the bowl with plastic wrap. Press the plastic wrap down lightly onto the guacamole. This will keep it bright green for at least a couple days. This is especially helpful when I’m prepping guacamole early before a party. Just give it a good stir when you serve it in order to incorporate the extra lime juice.
Then . . . decide what deliciousness you’re going to have with your guacamole! Chips? Burritos? I’m craving nachos . . .

Ingredients
- 3 avocados
- 1/2 cup chopped cherry tomatoes
- 3/4 teaspoon salt
- few cracks of pepper
- 3/4 teaspoon cumin
- 1/4 teaspoon crushed red pepper
- 3 teaspoons lime juice
- 1/2 teaspoon garlic powder
Instructions
- Smash avocado with the back of a fork until smooth. Stir in remaining ingredients. Serve with tortilla chips, tacos, or burritos!
Notes
You can also add chopped red onion to this recipe if you like! To prevent discoloration of the guacamole when you store the leftovers, squirt lime juice over the top of the guacamole. Press plastic wrap lightly down onto the guacamole and store in the fridge. Stir before serving.
