I leave for Boston for work again, tomorrow. 🙁 Being gone for work three weeks in a row makes me appreciate my weekends more. Hence, the giant, loaded, uber-fluffy, buttermilk-based, banana pancakes we got goin’ on here.
Despite the fact that Darwin is very patient about waiting for David to wake up at 8:30 or 9 when I’m gone, he seems to know that he can get me up out of bed earlier. He has gotten very good at the “rustle, rustle, rustle . . . siiiiiiigh” at the foot of the bed to signal “um . . . hello . . . puppy is ready for his walk, could you puh-leeze get out of bed lazy mom?”
If I deign to aim for some extra shut eye, fuzzybritches stands up in the middle of the bed, towering over David and I, looking down on us . . . judging us. If I even so much as look at him, it’s all over. He goes into full-on play-time attack, licking ears, nibbling fingers, grumbling and snorting and diving nose-first into the pillows. If I am lucky, I’m lucid enough to avoid eye contact. He decides that a walk is not happening in the near future. He then plops down for full-body spooning snuggles. Usually with his paws in David’s face and his nose under my chin. Those mornings are when I’m really in danger of oversleeping. How on earth does one motivate oneself to walk away from morning puppy snuggles???
This morning, after I had finally dragged myself out for a freezing cold walk with puppers, all I wanted was pancakes. Banana pancakes, to be more particular. I wanted chocolate chip banana pancakes. But David is inexplicably adverse to chocolate in his pancakes. But if I just make buttermilk banana pancakes, we can both go to town with whatever toppings we prefer. Voila! I give you peanut butter-covered, maple syrup-drenched, fruit-laden banana pancakes.
Here is to hoping that I eventually bring that husband-o-mine around to chocolate chips in pancakes and honey nut cheerios for dinner.

Ingredients
- 3/4 cup mashed banana (about 2-3 bananas)
- 1 1/2 cups buttermilk (or 1 1/2 Tablespoons vinegar + enough milk to equal 1 1/2 cups)
- 3/4 teaspoon vanilla extract
- 3 Tablespoons melted butter (+ extra for buttering the pan)
- 2 1/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 Tablespoons white granulated sugar
- Optional Toppings: butter, maple syrup, peanut butter, bananas, berries, honey, etc.
Instructions
- Butter or spray a skillet and heat to a couple smidges below medium heat.
- Mash and measure out bananas into a medium-sized mixing bowl. Whisk in buttermilk, vanilla extract, and melted butter.
- Stir in flour, baking powder, baking soda, salt, and sugar until just mixed.
- Scoop batter out onto preheated skillet and cook until bubbles start to rise to the top all over the pancake. Flip and cook an additional minute.
- Serve warm with desired toppings!
