While I like to pretend that I have become somewhat adept at adulting and am much more adultier than the young adults I see hooligan-ing around . . . my adult-ness kinda takes a hit when I admit that we have been to a themed amusement park three–no, wait–four times in the last three years. There was Disney Land. Then Disney World. And then Universal Studios, because duh: Harry Potter Land. Oh, and then there was Disney Land again.
I know. We are children.
And I LOVE it. I cannot quite put my finger on what it is about these places that gives me the happy joy joy the moment I step foot into the park. Guess I’m just going to have to go with… am I really going to give in… do I really just say… it’s magical. Happiest place on earth. All the things that are supposed to make us adults sigh and throw up a little make me the happiest clam on the beach. The brightest candle on the birthday cake. The . . .
okay. i stop now.
But seriously, guys. The 40 billion different mickey ears I get to wear every day? The fireworks? Stitch and Chip ‘n Dale, and Pluto hugs? The happy music and ice cream and churros and . . . CHOCOLATE COVERED BANANAS. Hells to the ye- whoops. back up. we are in disney’s magic bubble and in disney’s magic bubble, there is no swearing. There is no sadness. There is no grumpiness or badness or adulty-ness. BUT THERE ARE CHOCOLATE COVERED BANANAS ON A STICK. I dare you to try and feel like an adult when you’re balancing one of those babies in your fist and trying to walk and talk and eat it at the same time.
But who cares??? Because you’re in Disney. And Disney. is. magical.
Chocolate Covered Banana Nice Cream
So every nice cream is banana nice cream, because that is what nice cream is! And me being, well, me, I knew that I wanted chocolate banana nice cream. I was thinking an awesome brownie batter flavor to offer a healthy alternative to my obsession with brownie batter cookie dough. -_- But then I taste-tested this recipe and . . . there I was. Back in Disney with my chocolate covered banana.
This chocolate covered banana nice cream is:
- paleo
- gluten-free
- dairy-free
- refined sugar-free
- extra chocolatey
- velvety in texture
- MAGICAL! (ha – you knew I was going to go there, didn’t you?)
When I first looked up how to make banana nice cream, I was surprised at how easy the recipe is. Thinking to make my food blogger mark, I kept thinking of all these additions I could make. (#foodbloggerprobs) Then I was like “wait a minute. what am i doing?” The beauty of banana nice cream is that it is so simple. So I kept it simple. I amped up the cocoa for this recipe, because–um–chocolate. Now, I HIGHLY recommend using finely chopped chocolate or mini chocolate chips. When I photographed this recipe, all I had were normal-sized dark chocolate chips. Which are awesome, but when they’re frozen, they are kind of hard to bite down on. So definitely go with the chopped chocolate or mini chips for your chocolate covered banana nice cream.

Ingredients
- 4 medium bananas, chopped
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup + 2 Tablespoons almond milk
- 1/2 cup chopped chocolate (optional)
- optional toppings: shredded coconut, nut butter, or chocolate
Instructions
- Measure milk and vanilla extract into a small bowl. Use a fork or whisk to whisk cocoa powder into the milk/vanilla. This may take quite a bit of stirring since the cocoa powder is so dry.
- Add cocoa/milk mixture to a food processor. Add salt and bananas. Blend in the food processor until fully mixed and there are no more banana chunks. Stir in chopped chocolate. Spread the nice cream in a microwave-safe bowl or glass baking dish and cover with plastic wrap. Press the plastic wrap to the surface of the nice cream and freeze until hard.
- To serve, soften the nice cream in a microwave on 50% power until you can scoop with an ice cream scoop. (Remember to remove the plastic wrap!)
- Alternatively, thaw the nice cream on the counter for at least one hour, run an ice cream scoop under hot water, and scoop to serve! Top with anything you like and enjoy!
Notes
I highly recommend using finely chopped chocolate or mini chocolate chips. They will freeze hard and smaller pieces will be easier to eat in the nice cream. If you are strictly paleo and not a fan of dark chocolate, check out Davis chocolate chips or Enjoy Life chocolate chips.
