Kitchen Sink Cookies | Easy Recipe | Cookie Swap

Everything but the kitchen sink!

Oats and chocolate and pretzels and peanuts and marshmallows, oh my!

Where my fellow cookie-holics?  Cookie-aholics?  Cookie-lics?  meh.  Where my fellow cookie-lovers at?!  Don’t get me wrong.  I LOVE doing some more extravagant baking from time to time.  Like cherry pavlovas.  Like pesto-stuffed challah.  And DEFS like victoria sandwich.

But sometimes there is nothing better than quickly beating the crap out of some butter and sugar and mixing-in every snack-like food you’ve got spilling out of your pantry.  Hence the name – kitchen sink cookies.  I’ve also heard these called compost cookies or garbage cookies.  Which . . . seems . . . a little less flattering.

But the ideas for these cookies are endless!  I’ve included a comprehensive list, below.  For our cookies, David immediately cut coconut (I was bummed) and I immediately cut white chocolate (David was bummed).

  • toffee bits
  • salted caramel bits

Ingredients

  • 3/4 cup shortening (you can replace with butter but cookies won't be as soft)
  • 1/4 cup unsalted butter, at room temperature
  • 3/4 cup dark brown sugar (can replace with light brown sugar)
  • 3/4 cup white granulated sugar
  • 2 eggs
  • 1/2 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1/4 cup + 2 tablespoons chocolate chips
  • 3/4 cup rolled oats
  • 1/2 cup mini marshmallows
  • 1/3 cup crushed pretzels
  • 1/4 cup crushed graham crackers
  • 2 tablespoons salted caramel bits and/or toffee bits
  • 2 tablespoons chopped peanuts
  • crushed potato chips for sprinkling (optional)

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and line a couple baking sheets with parchment paper.
  2. Cream shortening, butter, brown sugar, and sugar together. Beat in eggs and vanilla until well mixed. Beat in 1 cup flour, baking soda, and salt. Stir in remaining flour and oats.
  3. Stir in all of the mix-ins you want! You can customize based on your personal preference, but the measurements and ingredients above are exactly as I made them. Scoop and roll two tablespoons of dough and place on baking sheet. Bake for 8-9 minutes until edges are starting to brown. Remove from the oven and gently move to a cooling rack. Sprinkle each hot cookie with crushed potato chips for a salty crunch!
