S’mores are one of my top ten foods in the whole world. The WHOLE world of food, you guys. And all I want are those crumbly graham crackers, chocolate, and oh-so-perfectly toasted marshmallows. Sadly… David and I are several years into adulting and we don’t get away for mountains and campfires as often as we like. Hence, these s’mores cookies! All you need to say is: YES.
S’mores always take me back to the night before David and I got married. The wedding was in a canyon in the Wasatch Mountains. We knew we would have friends traveling in from all over the country, so my parents were generous enough to rent a large cabin that slept 20+ people. David and I will always be so overwhelmed by all the happy feelings that weekend. Much of that happiness came from having all of our closest friends in one place. Watching our various friend groups collide and become friends. The night before the wedding, we were all at the cabin–just messing around. We played games, hot tubbed, laughed around the campfire, and made s’mores. I don’t even remember who I was sitting next to as I held out the first pointy stick I had found. Marshmallow on the end. Jut above the glowing coals to get that nice dark brown color. (Though I’m not above a flaming burnt marshmallow, either!) I was sitting with a group of my girls and David was over in a man-huddle talking to his boys. All I remember is just being insanely happy.
Oh. And beauty sleep before the wedding day? Nah – who needs it anyway. David and I were up until at least 2 am the night before our wedding. Around 1 am, David and I snuck away to the back porch to write our vows. (Champion procrastinating right there.) We both smelled like campfire. I had marshmallow stuck to my fingers. Pretty sure I was in a hoody and my hair was in a messy bun. We could not have been less glamorous the night before our wedding. And it was perfect. <3

Ingredients
- 1 cup graham cracker crumbs
- 5 Tablespoons butter, melted
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon sea salt
- 1 cup semi-sweet chocolate chips
- 3/4 cup mini marshmallows--divided
- 1 regular sized Hershey's Milk Chocolate bar, frozen
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Stir melted butter into graham cracker crumbs with a fork until it starts to stick together. It's okay if the crumbs are still a little loose.
- Line an 8 x 8 baking pan with parchment paper. (Tip: If you're having trouble getting the parchment paper to stay still, butter the baking pan and then press the parchment paper into it.) Press crumb/butter mixture into the baking pan until you have an even layer across the bottom of the pan.
- Mix softened butter, sugar, and brown sugar in a large mixing bowl, until creamed together. Mix in egg and vanilla until fully incorporated.
- Add half of flour, baking soda, and salt to bowl. Mix. Add in remaining flour and mix. Dough will be very thick.
- Stir in chocolate chips and 1/2 cup mini marshmallows.
- Use your hands to break off pieces of dough, flatten, and add to baking pan, covering as much of the graham cracker crust as you can. Try to tuck the marshmallows into the dough, rather than leaving them on top. (This isn't critical, so don't stress.) Bake in preheated oven for 15 minutes.
- Remove pan from oven, sprinkle with 1/4 cup remaining marshmallows and broken pieces of Hershey bar. Return to oven for 15 minutes. Watch for the marshmallows to get toasty brown. Add another five minutes if you have to. When the marshmallows are toasty brown, pull the bars from the oven.
- If you want the Hershey's to keep its shape and text, allow bars to cool 100% before cutting. If you want ooey-gooey-ness, feel free to dig in early!
